Creamy Cheesy Potato Soup with Bacon


Ingredients:
6 peeled and cubed potatoes
1 minced onion
200g cream cheese
1 cup heavy cream
4 cups chicken broth
1 tbspn paprika
1 tbspn garlic powder
salt and pepper
1 cup diced bacon (or ham)
1 tbspn parsley
1 tbspn chives

Method:
In a medium pan combine broth, potatoes, onion and spices. Bring to a boil. Reduce heat. Cook 15 minutes until potatoes are tender. Smash the potatoes to release their starch for thickening. Add cream cheese and heavy cream and stir until cheese chunks are melted. Simmer until ready to serve. Garnish with snipped parsley, crumbled bacon, croutons or diced ham, as desired.

Veredict:
This is one hell of a soup! It's so, so yummy and yet so simple. I love all things cheesy and creamy and this soup works wonders as one of the most delicious Winter meals I've ever tried. I can also assure you it will make you feel full after a few spoonfuls. You might as well add mushrooms or corn to this thick soup. Pick a side crusty baguette for a comforting dinner - perfect for a cold rainy day. YUM!
