Watermelon Gazpacho


Ingredients:
8 cups fresh watermelon
1 red bell pepper, diced
1 cup tomatoes, diced
1 cup cucumber, diced
1 cup red onion, diced
1 cup cilantro/parsley/basil/oregano/mint, fresh
1 jalapeno
2 cloves of garlic
1 cup lemon juice
1 cup lime juice
1 tbsp cumin/thyme
fresh ground black pepper (to taste)
salt (to taste)
1 avocado

Reserve a small portion of the diced ingredients and spices for a garnish - you can add avocado, cubed watermelon, nachos, croutons, etc.

Method:
Simply add all ingredients into a blender and blend until smooth. Serve chilled. Enjoy!

Veredict:
Unbelievably tasty and refreshing! Best Summer soup ever, honestly - light, easy to digest and simply delicious.
The taste is so cool and juicy, yet savory. If you love watermelon, you will love this dish, trust me.

It Girl: Jane Birkin


The one who popularized the boho-chic look during the Swinging Sixties, the one who paired minimal make up with scandalous mini dresses, the one who was effortlessly cool and an inspiration to generations of girls... the one and only, Jane Mallory Birkin!

British francophile and long-time lover to the late Serge Gainsbourg, Jane has become an icon, famous for her sense of style, her acting and her music. What I love about her personal concept of style is the simplicity, the subtle details, her bare feet and the metallic frocks, along with her penchant for pea coats (how 60's darling of her!) and denim shorts. Not to mention the blunt bangs, the free-spirited charm, the way she managed to balance casual clothes with sophistication - beyond perfect.

I always seek inspiration from doe-eyed Jane: the knee high boots, the iconic wicker basket, the tomboy shorts and loose shirts, the bohemian attitude, the dreamy expression, the extreme eyelashes, the flawlessly sleek hair, the white crochet... Her sense of fashion has influenced generation after generation, and no wonder she is one of my style crushes. She is such a muse and more importantly, she aged beautifully and still looks fabulous! Also, she is the mother of Kate Barry, Charlotte Gainsbourg and Lou Doillon - creative creatures galore!
