Creamy Arugula Soup with Parmesan


Ingredients:
5 cups arugula, washed and spun dry
1 leek, sliced
5 medium potatoes, peeled and diced
1 tbsp butter or olive oil
1 onion, chopped
garlic powder
4 cups chicken broth
1 chunk Parmesan rind
200ml cream
salt and pepper

Method:
Warm the butter or olive oil in a large pot set over medium heat and add the onion. Sauté until translucent, about 5 minutes. Add the leek, the potatoes and the chicken broth. Cook until tender. Add arugula, cream and grated Parmesan, garlic powder, season with salt and pepper, and cook for 10 minutes. Off from heat, purée the soup using a blender. Serve with grated Parmesan and drizzled with olive oil or cream.

Veredict:
A Wintery nourishing soup that will comfort your stomach after days of alcohol and junk food. 
I know I always add fattening ingredients but this soup wouldn't be the same without the Parm cheese and the cream.

I came across this dreamy tune while watching The Following and ended up listening to the whole album.

Now, a little bit of Science. Do you know what Aerogel is? I didn't... until now. And I'm fascinated! 
Aerogels are solid materials, yet they don't resemble a gel in their physical properties, even though they are made from gels - confusing, I know. So you can have an idea, a brick can be supported by a piece of aerogel with a mass of only 2 grams, I shit you not! We're talking about a synthetic porous ultralight material derived from a gel, in which the liquid component of the gel has been replaced with a gas, resulting into low density and low thermal conductivity - some call it "frozen smoke" or "solid air". Apparently, it feels like styrofoam to the touch.
Aerogel was first created by Samuel Stephens Kistler in 1931, as a result of a bet with Charles Learned over who could replace the liquid in "jellies" with gas without causing shrinkage (Walter White would've love hanging out with these guys!). Interesting, huh?
