Grilled Pineapple with Fried Banana and Greek Yoghurt with Mint Leaves

5 pineapple slices
1 banana
1 greek yoghurt
1 cup fresh mint leaves
1/2 cup lemon juice
1 tbsp vegetable oil
1/2 cup breadcrumbs
1/2 cup honey

Add some drops of lemon juice to the pineapple and grill it or heat it in the oven (or you can just fry it along with the banana, it's up to you!) for a few minutes. Chop the banana into tiny slices. Fry the sliced banana in vegetable oil and honey. Sprinkle it with breadcrumbs until it looks breaded enough. Serve the pineapple and the fried banana with greek yoghurt and some fresh mint leaves.

This is one of the healthiest impromptu delights I've ever tried. It's the perfect Summer light meal, vegan-friendly and the mint adds a refreshing taste. I didn't really enjoy pineapple until now, considering how delicious this sort of food combo can be.
