Quince Soup with Greek Yogurt


Ingredients:
1 onion
1 clove of garlic
40 g olive oil
200 g quince, peel off, diced
350g chayote, cut into pieces (or zucchini, or cauliflower)
200 g of carrot, sliced
800 g water
Salt and pepper
Greek Yogurt

Method:
Chop the onion and garlic and saute them in olive oil until the onion is translucent.
Add the quince and sauté about 8 minutes. Place the chayote, carrots and water and let simmer until vegetables are tender. 
Season with salt and pepper and mash. Check the seasoning and serve garnished with yogurt.

Veredict:
This soup was love at first taste! It's creamy and slightly sweet, mostly due to the seductively fragrant quince.
It's a rustic soup with a seasonal, exotic twist. Even the kids who don't like soup will love this one, trust me.

  3. sopa com yogurte!? wow nunca tinha visto, vou ter de experimentar!!
    Desde que estou em Easmus que tenho reparado que as pessoas metem coisas completamente diferentes na sopa conforme o país, por exemplo aqui toda a gente acha entranho eu meter um fio de azeite na sopa, eles metem um pacote de natas ...

  6. you know the only quince thing i've ever eaten is quince paste with cheese and crackers, so i can't imagine what a soup would taste like! but it sounds really interesting and i believe you when you say it's delicious.

    & don't worry, i'm a sucker for eating late at night too, it's a bit of a problem, haha. something i need to trying and stop myself doing so much!
